Instructions:

  1. Heat the Oil:
  • In a large pan over medium-high heat, heat the sunflower oil until hot but not smoking.
  • Add the mustard seeds and cumin seeds, and cook for about 1 minute, stirring until fragrant. Cover the pan as needed to contain any splattering.
  1. Saute the Onion:
  • Reduce the heat to medium and add the sliced onion. Sauté until it starts to turn brown, about 5 to 7 minutes.
  1. Cook the Bhindi:
  • Add the bhindi to the pan and increase the heat to medium-high.
  • Cook until the mucilage from the okra starts to release and the onion darkens, about 4 to 6 minutes more.
  1. Add Spices:
  • Sprinkle in the coriander powder, salt, turmeric powder, and red chilli powder to taste.
  • Cook, stirring often, until the bhindi turns brown in spots and looks dry, about 6 to 10 minutes more.
